Watermelon salad


This refreshing combination of sweet and savory is a delicious surprise!

½ cup chopped red onion
Juice of 2 limes
4 cups cubed seeded watermelon
¼ cup pitted Kalamata or halved black olives
¼ cup finely chopped cilantro
Drizzle of olive oil
2 ounces feta cheese, crumbled

Combine onions and lime juice in med-large bowl and let sit for 10 minutes. Add watermelon, olives, cilantro, drizzle of olive oil, and toss. Cover and chill 1 hour. Sprinkle with feta cheese.
