Huckleberries!
It's huckleberry season and we are excited. This sweet and tart little berry is not sold commercially, so you will need to be adventurous and hunt for it yourself. Finding and cultivating huckleberries is part of the fun - because you'll need to take a day off and drive to a remote and forested location.
You may even wish to bring a little picnic and make a fun day of it.

Quick fruit tart
This quick take on the French classic dessert is easy to whip up before your next summer gathering.
1 box vanilla or lemon flavor instant pudding mix
1 orange, zested
1/2 cup seedless raspberry or blackberry preserves
1 prepared graham cracker crust
1/2 pint raspberries
1/2 pint blackberries or blueberries
1 can mandrin oranges, drained
6 large strawberries, sliced
2 kiwis, sliced
2 tablespoons chopped fresh mint
Make pudding according to package directions and let stand 5 minutes. Stir orange zest into the pudding. Spread a thin layer of preserves across the bottom of graham cracker crust. Top with pudding. Arrange fruit on pudding, then sprinkle tart with mint.

I know, I know...we are all looking to use less paper these days. The Mermaids are aware of conservation, and also recycling. That's why we publish a web-based magazine! However, sometimes we offer stories that are a little more in-depth. It's often easier to read on paper than on a screen. So we say - print and read those things that you really love! Then recycle the paper!
